hope you enjoy this video of me cutting up a #Xerocomellus bolete. The common name for boletes that have yellow/red stipes, yellow pores (that stain blue), and a dark reddish brown/black cap with an uneven surface is a “Zellers Bolete” - however Xerocomellus zelleri isn’t particularly common in California/Oregon, so #xerocomellusatropurpureus is more likely (@yellowelanor confirmed this for me). I explain this just to illustrate how confusing common/scientific names can be. I like common names because they are easier to remember and pronounce. They allow you to share a common language with amateurs and pros, yet they are imprecise and often lead to confusion. It’s also difficult because the defined species barriers are breaking down as we sequence more and more fungi, instead of being a particular species, we are finding that fungi exist as a continuum of subspecies often defined as a “group” or “complex” instead of nicely delineated species. Anyhow, these can be tasty edible mushrooms if they are not full of bugs, they lack great texture, but can be dried to enhance the umami character. I found it fascinating how the pores quickly bruise blue but the flesh does not - possibly due to differences in the distribution/concentration of variegatic acid and the oxidase enzyme. The blueing reaction is due to oxidation of organic acids, this mushroom is not toxic or hallucinogenic.
